Foodie Friday - gingerbread cupcakes

Happy Friday everyone! I think we all deserve a treat for being so good this week so I am sharing some sweet treats that I've been making recently.



Last week it was starting to get very autumnal here in Kent and this made me very excited! I was looking forward to wearing jumpers and drinking hot chocolate and not getting strange looks.

At work we had a charity day for a local good cause and requests were sent out for donations for a bake sale. I saw this as a great opportunity to get some baking done so quickly volunteered!


I pulled out a great go to recipe from BBC Good Food for gingerbread cupcakes (find it here) and used a recipe for cinnamon cream cheese frosting that I use all the time because its so simple (find it below) I even found some gingerbread men shaped sugar decorations at Sainsbury's!

I was really happy with how they turned out, they were quick and easy to make and they tasted yummy! They were sold pretty quickly at the bake sale and have already received requests to make them again so I think my official taste testers approved!


For some reason the weather has returned to summer this week and sharing a recipe about gingerbread cupcakes seems a bit strange but I doubt the weather will hold for long! What food does the autumn weather inspire you to make? what are your go-to recipes? I would love to see your creations!

Cinnamon cream cheese frosting

300g cream cheese
225g of unsalted butter
500g icing sugar, sifted
1 tsp vanilla extract
2 tsp ground cinnamon
  • Beat together the cream cheese and butter until smooth and fluffy
  • Add the vanilla extract and cinnamon and mix
  • Add the sifted icing sugar gradually and mix well
  • Tip: Sifting the icing sugar is really important or you'll get lumps!
  • Pipe the icing onto your cupcakes using a piping bag or spread on the top of cupcakes if you are being lazy!

Because this icing is made from cream cheese if the cupcakes are not going to be eaten in the next few hours I would either store the cream cheese in the fridge until you are ready to decorate and eat or put the decorated cupcakes in the fridge.
